Only the indigenous yeasts work is put in place. Those yeasts are natural, they are found on the skin of grapes. The winegrower will not use any control technique on his wine (no fining, no filtering, etc.). Sulfur is also almost banned by some winegrowers, others use a homeopathic quantity to maintain their wines.
