What is a wine produced according to the methods of organic and biodynamic farming and that is a wine with no added sulfites? Answer: a natural wine. The holy grail for a natural winemaker is to avoid adding sulfur at bottling to protect the wine. A natural wine, as the name implies, is made naturally, without any chemical protection—if it starts fermenting again, good for it; if it develops flaws (mousy, vinegary, etc.)... so be it.
