The wines of Domaine de Savouetaz
The story of Domaine de Savouetaz
Pierre Grobon recently settled in Chautagne, north of Lac du Bourget, one of the most singular areas of Savoie wine. Before starting out, he trained with two winemakers who matter in the natural wine world: Corentin Houillon in Savoie and Emmanuel Houillon in the Jura. From those years of apprenticeship he kept a demanding philosophy: wines without any inputs, from vine to bottle, unfiltered and without added sulphur. Chautagne gives wines with a very recognisable style, fruity but above all spicy, sometimes slightly smoky, and Pierre makes them with great delicacy, between carbonic macerations and barrel ageing. His very first vintages were already real successes. Living, digestible natural wines with a bright future: an estate to follow very closely.
The cuvées of Domaine de Savouetaz
Sers-y is a gamay in Chautagne style: fruity, spicy and slightly smoky, gourmand and digestible, ideal at aperitif time with some saucisson, a pâté en croûte or a Morteau sausage. Goutes-y puts Chautagne pinot noir in the spotlight: eleven days of whole-bunch carbonic maceration, then a few days destemmed, before barrel ageing, with no inputs from A to Z. A pure pinot juice, tangy, fruity and peppery, as comfortable at aperitif as at the table. In white, Josette is a jacquère aged one year in barrel on lees, then one year in bottle: a more complex style with a rich texture, but incredible acidity and liveliness. Unfiltered and sulphur-free, it is mouthwatering and pairs very well with a good Savoie cheese.
