The project of Thibaud, a renowned Condrieu winemaker

Thibaud Capellaro stands out for his boldness, his desire to step off the beaten track of Côte-Rôtie wines, and his overflowing passion for making pure, clean wines that leave a lasting impression. Thibaud was not destined to become a winemaker: he started out studying business. But things quickly took another turn, and he threw himself into winemaking alongside big names in France (André Perret, Domaine Joblot, Château le Devay...) and in Australia (Adam Foster, Syrahmi). After these experiences, his story can be divided into two parts. It begins with his négoce business, Slope, which lets him buy grapes from small growers farming organically in the Gard, the Ardèche, the Monts du Lyonnais and even Italy's Piedmont. Thibaud Capellaro is above all a self-taught enthusiast; his success does not come from a family inheritance. The second part is his own estate. Thibaud acquired plots in Ampuis on the terroirs of Côte-Rôtie, plots shunned by the older generation as too hard to work, but with a promising future in his eyes. Today he farms 4 hectares of vines organically, and his natural approach to winemaking sets him apart in his region. He intervenes as little as possible: indigenous yeasts do their work and fermentation is spontaneous. His goal? To keep as much as possible of the aromas of fresh fruit and an exceptional terroir. Ageing is an experiment for him, and he tries out different vessels.

The wines of Thibaud Capellaro

Thibaud makes a range of white wines and red wines that will reconcile you with Rhône Valley wines, or confirm your love of Syrah and Viognier. Several cuvées stand out, from the terroirs of Côte-Rôtie and Condrieu… First there is Ombre et Lumière, born of his collaboration with Etienne Seignovert: a striking blend of Grenache, Syrah and Viognier, fresh and fruity just the way we like it. Thibaud also makes the Ze-Ro cuvée from Syrah and Viognier, vinified without sulphur, again with incredible freshness and crunchy fruit. Le Temps d'Une Bise is his orange wine, a maceration of Viognier and Marsanne: perfectly balanced between aromatic complexity and freshness. Try it if you come across it!
