The wines of Le Vin des Pauzes
The story of Le Vin des Pauzes
Nothing destined Florence Limousin and Damien Aube to make wine. Before becoming winemakers, they worked as a hydrologist and in humanitarian aid. Then came a crush on a small corner of Ardèche, on the right bank of the Rhône, and the wish to change their lives and settle among the vines. At Le Vin des Pauzes, they grow a mosaic of grapes, gamay, sauvignon blanc, grenache, cinsault, all without any chemicals, neither in the vineyard nor in the cellar. The wines are made without sulphites and without filtration, with great delicacy: here, people speak of infusion rather than extraction. Above all, Florence and Damien are looking for fruit, freshness and drinkability. Gourmand, harmonious natural wines from Ardèche, proving that wines of great finesse can be made in the south of the Rhône Valley.
The cuvées of Le Vin des Pauzes
Nour is the cuvée that introduced us to the estate, and what a bomb! An infusion of grenache and cinsault, incredibly digestible and gourmand, both fruity and floral. Unfiltered and sulphite-free, this Ardèche wine unfolds aromas of strawberry, forest fruits and dried flowers, in a style reminiscent of some great names of Châteauneuf-du-Pape. A real lesson in mastery from Florence and Damien, on southern grapes often imagined as heavier. Nour is a pleasure served slightly chilled, at aperitif time or at the table, with simple food that lets the fruit shine. The estate's other cuvées, made from gamay or sauvignon blanc, follow the same philosophy: living, sincere wines to share.
