The story of Domaine Zélige-Caravent
Perched in Corconne, north of Montpellier, Domaine Zélige-Caravent spreads across a mosaic of small plots nestled in the garrigue. This typically Mediterranean landscape offers a precious geological diversity. The limestone soils, scattered with fine gravel, give the wines a distinctive freshness. The vines are farmed according to biodynamic principles, following the rhythm of the seasons and the lunar cycles. Here, each plot is tended by hand, from winter work to harvest. Hand-picking makes it possible to select only the healthiest, ripest grapes. Winemaking relies on spontaneous fermentations with no added inputs, to preserve the authentic expression of the terroir. The wines are then aged in concrete tanks to keep their natural balance.
The cuvées of Domaine Zélige-Caravent
The cuvées of Domaine Zélige-Caravent tell the story of the Mediterranean terroir. The reds, made from grapes such as carignan, cinsault, aramon, syrah and mourvèdre, range from light, fruity wines to more structured, warming ones. Each plot is vinified separately to reveal the full richness of its soils. The estate also makes a few confidential white cuvées, in which carignan blanc is blended with other local varieties. Minimalist winemaking produces sincere wines that are both digestible and expressive. These bottles are wonderful companions for simple, gourmand moments, and reflect the soul of Pic-Saint-Loup.
