The spirits of Domaine des Hautes Glaces
The story of Domaine des Hautes Glaces
In the heart of the Trièves, in Isère, facing the Alpine peaks, Domaine des Hautes Glaces is a farm-distillery like no other. The original idea, driven by Frédéric Revol: to reinvent whisky by approaching it the way a winemaker approaches wine, placing terroir, nature and time at the centre of every creation. The estate grows its own cereals, mainly barley, using organic and regenerative farming on the surrounding slopes. The grain is then processed on site and distilled with demanding craftsmanship, over a wood fire and in Cognac-style stills. Every step, from choosing the plots to ageing in casks, follows a sustainable approach where nothing is wasted. The result: elegant, lively mountain spirits that express the soul of their land, and that fully belong in a natural wine cellar.
The spirits of Domaine des Hautes Glaces
Indigène is the ideal entry point into the world of Hautes Glaces. This single malt, 100% malted barley, reinterprets the king category of Scotch whisky in the estate's own way: it is composed from a palette of single-plot spirits, like an aromatic snapshot of the cellar. The result is complex, lively and richly malty. The Episteme range goes even further in the logic of terroir, with whiskies from a single plot. Vulson, for example, comes from barley grown on the plot of the same name, double-distilled over a wood fire, then aged in so-called “roux de Cognac” casks, chosen so as not to mask the character of the grain. A powerful, complex whisky for those who like to understand where what they taste comes from.
