Marc set up with, notably, old fer servadou vines belonging to his grandfather, formerly a livestock farmer. The story of Domaine des Boissières
Domaine des Boissières was born in 2017 on the slopes of Balsac, in Aveyron, a corner of south-west France where vines long lived alongside livestock farming. That is in fact the story of Marc Fraysse's family: his grandfather was a livestock farmer and owned old fer servadou vines. When he set up, Marc took over these vines, and with them a grape typical of the region, still too little known. His philosophy fits in one sentence: express the terroir as legibly and transparently as possible. To do so, he farms his vines organically and makes wine with as little intervention as possible. Fer servadou, also called mansois in Aveyron, gives spicy, peppery wines with real freshness, far from the clichés of powerful southern wines. A young estate reviving a family winegrowing heritage, with 100% natural wines full of personality.
The cuvées of Domaine des Boissières
Los Amics is a very special, confidential cuvée that sums up the estate's curious spirit. It is made from fer servadou, a black grape typical of the region, usually made into red wine. But here Marc turns it into a blanc de noirs, pressing the red grapes without letting the juice take on colour. The result loses none of the grape's specificity: you find a spicy, peppery style with the freshness and tension of a white. An original wine that will surprise the most curious enthusiasts, and pairs perfectly with white meats, a roast chicken or gently spiced cooking. A real discovery to share with those who think they have tasted everything.
