The wines of Didier Chaffardon
The story of Didier Chaffardon
Didier Chaffardon settled in 1996 in Saint-Melaine-sur-Aubance, in the heart of Anjou, on a pocket-sized estate of about 3 hectares split into several plots. The old vines, rooted in schist and clay soils, are farmed according to organic principles, without chemicals. Didier pays particular attention to biodiversity, encouraging rich flora and fauna around his vines. The harvest is done by hand, with rigorous sorting of grapes at optimal ripeness. In the cellar, vinifications are natural, with no added sulphites and accompanied by classical music, in an approach that respects living things. The reds are vinified as whole bunches in tanks, while the whites are aged in barrels that have held several wines. This sensitive, experimental approach allows Didier to create wines that fully express their terroir and vintage.
The cuvées of Didier Chaffardon
The cuvées of Didier Chaffardon reflect his commitment to free, expressive wines. Among them, "Le Rouzé" is an original blend of Cabernet Franc and Cabernet Sauvignon, made by direct pressing, offering a light, fruity wine between red and rosé. "L'Incrédule" is a red from Cabernet Franc, vinified as whole bunches, which stands out for its supple structure and freshness. On the white side, "L'Indolent" is a Chenin aged for two years in barrels, showing lovely tension and remarkable depth. Didier also offers more confidential cuvées, such as "Confiturine", a sweet Chenin with high residual sugar, and "La Mentule Matagrabolisée", an atypical wine that shows his creativity. All his cuvées are made as Vin de France, outside the appellations, for total freedom of expression. They are marked by their sincerity, their energy and their ability to convey the soul of the Anjou terroir.
