A direct but slow pressing of Merlot in a ratchet press, extracting little colour and matter while keeping plenty of freshness. It sits halfway between a white aged on its lees Jura-style and a light, Beaujolais-type red. A real UFO, to be enjoyed for pleasure without trying to put it in a box. A must-discover!
