Wine and sushi pairing
The delicate balance of sushi
Sushi is about mastery of gesture and the search for balance: nothing too much, everything in nuance. A good pairing should follow the same philosophy. No oaky or overly powerful wines here: we prefer lively, straight and slightly saline whites. Their natural acidity cleanses the palate between bites, while their citrus and white-flower notes extend the freshness of the raw fish. A well-made, pure and precise natural wine highlights the texture of the rice and pairs perfectly with the briny flavours of tuna, salmon or sea bream.
Perfect natural wines to go with sushi
A natural Muscadet Sèvre-et-Maine is a safe bet: lively and slightly saline, it matches the marine notes of sushi perfectly. A Burgundy Aligoté or a dry Loire Chenin Blanc brings ideal mineral tension, especially with oily fish like salmon. For a bolder pairing, a white natural sparkling wine (or “pét’ nat”) adds a festive, airy touch, perfect for sharing platters. And for a surprise, a light orange wine from Italy or the Jura works wonderfully with vegetable makis or vegetarian sushi. Precise and digestible, these natural wines create zen, balanced pairings full of freshness.
