The wines of La Salada
The story of La Salada
A breath of fresh air has been reported in Spain, and Toni Carbó has a lot to do with it. This winemaker belongs to the new generation of Catalan natural winemakers, who revisit their region's traditions with a free, sincere approach. His estate, La Salada, is in the Penedès, about forty kilometres from Barcelona. Toni farms family vines there, free of any chemicals, following the principles of biodynamic agriculture. He works Catalonia's historic grapes, white and red, and doesn't hesitate to blend them boldly, sometimes mixing white and black grapes in the same cuvée. In the cellar, winemaking is natural, without inputs, to let the fruit and freshness speak. The result: wines with 100% Catalan flavours, light, gourmand and digestible, respecting tradition while dusting it off. Natural Spanish wines not to be missed.
The cuvées of La Salada
Roig Boig, “crazy red” in Catalan, lives up to its name. Toni blends red and white grapes to make a wine of incredible lightness and gourmandise, halfway between a light red and a clairet. It is a summer wine, a wine for friends, a poolside wine, in short: a wine for a good time. The secret is to chill it a little before serving at aperitif time: it then slips down effortlessly, with some tapas, Iberian charcuterie or grilled vegetables. It also pairs very well with simple Mediterranean food, a summer salad or grilled meats. A cuvée that perfectly sums up the spirit of La Salada: free, joyful and terribly digestible, just like the new Catalan natural wine scene.
